                    Temperature Monitoring

Use the SmartReader Plus 6 data logger placed inside a thermally insulated box with

thermocouple probes running outside the box at different directions to test for cold

spots, lateral heat problems, and skip heat problems.  If there are cold spots in the

oven, the bread will cave in.  Lateral heat problems refer to temperature differences on

either side of the oven, which cause one side of the bread products to be darker than

the other side.  Skips refer to when the bakery is changing from one product to another.
